{"id":133,"date":"2009-05-04T16:58:30","date_gmt":"2009-05-04T16:58:30","guid":{"rendered":"http:\/\/zestmag.com\/online\/?p=133"},"modified":"2012-09-04T17:05:34","modified_gmt":"2012-09-04T17:05:34","slug":"ichef-concepts-and-solutions-promoting-healthy-living","status":"publish","type":"post","link":"https:\/\/zestmag.com\/online\/ichef-concepts-and-solutions-promoting-healthy-living\/","title":{"rendered":"iChef Concepts and Solutions: Promoting Healthy Living"},"content":{"rendered":"<p><strong>By PePe Castro<\/strong><\/p>\n<p><strong><a href=\"http:\/\/zestmag.com\/online\/wp-content\/uploads\/2012\/09\/meds32.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-134\" title=\"meds3\" src=\"http:\/\/zestmag.com\/online\/wp-content\/uploads\/2012\/09\/meds32.jpg\" alt=\"\" width=\"250\" height=\"255\" srcset=\"https:\/\/zestmag.com\/online\/wp-content\/uploads\/2012\/09\/meds32.jpg 250w, https:\/\/zestmag.com\/online\/wp-content\/uploads\/2012\/09\/meds32-50x50.jpg 50w\" sizes=\"auto, (max-width: 250px) 100vw, 250px\" \/><\/a>With only P5,000 as start-up capital, Allan Gruenberg Jose, a 2004 graduate of Bachelor in Science in Hotel, Restaurant and Institution Management degree from the De La Salle University \u2013 College of Saint Benilde, started the offering recipes from the South Beach Diet (SBD) to three clients \u2013 \u201cmore as a means of practising my cooking skills, primarily catering to friends and relatives,\u201d he recalls. \u201cI had no boss, so I was free to explore and discover what cooking meant to me.\u201d<\/strong><\/p>\n<p>The decision to go solo came about when, while working for a restaurant in Makati City, where he attributes the owner chef for \u201cteaching me a lot of things,\u201d Jose says, he nonetheless realized that \u201cthere\u2019s more for me to learn about cooking, (and if I wanted to learn everything, I) had to pursue and discover (this learning) by myself.\u201d<\/p>\n<p>When the business started picking up, especially since Gruenberg is one of the extremely few offering SBD recipes on demand in Metro Manila, if not the Philippines, the official birth of iChef Concepts and Solutions came to be.<\/p>\n<p>\u201c(From a small start, I) slowly bought my own equipment, and eventually was able to build a small commissary kitchen,\u201d he says, so that the \u201cinitial investment was easy to gain back, even if, but since I started with practically all borrowed equipment, the investment was continuous.\u201d<\/p>\n<p>Success can only go so far, however, so that despite going more commercial, Jose says they continue \u201cproducing the best quality of food affordable, so that a lot of people, not just the (well off), can experience our food,\u201d he says. This, for him, is very important, as teaching people to \u201ceat smart\u201d has become an advocacy, too; which was what led him to go into promoting SBD in the first place.<\/p>\n<p>SBD was started by Arthur Agatston in Miami, Florida \u2013 first as a diet plan for his cardiac patients, who he believed should cut down consumption of \u201cbad\u201d fats and carbohydrates, e.g. those with a high glycemic index, which creates an insulin resistance syndrome; and those that are filled with saturated fat and trans fat, thereby contributing to an increase in cardiovascular disease. The diet has three phases, all of them emphasizing the need to permanently change the way of eating of individuals \u2013 and not just those dieting \u2013 by focusing on healthy food such as whole grains, vegetables, and those with mono- and polyunsaturated fats; and avoiding processed foods, as well as those with high fats.<\/p>\n<p>Jose, though, believes in promoting healthy eating not just as a means to lose weight, but as a change in lifestyle necessary for good living. \u201cGone are the days of Zero Carbohydrates and All Protein diets. The Eat Smart Diet System emphasizes on balancing what you eat, choosing foodstuff with more nutritional value rather than just picking the low sugar and low carbohydrate substitutes. It\u2019s not anymore about picking what has less fat, but also what positive and negative effects each foodstuff have on your body. Weight loss is an immediate goal, but starting and living healthy is a lifetime commitment,\u201d he says in iChef\u2019s blog. \u201cThat is our mission in the diet (we offer) \u2013 to give you healthy food that would aid you to lose weight, but (what we) eventually hope (our customers will) incorporate in their (regular) diet.\u201d<\/p>\n<p>iChef\u2019s current package includes three meals and a snack per day for seven days, delivered on a weekly basis every Sunday (cut-off reservation is Thursday preceding the week of delivery). The menu is changed every week, going through 12 to 15 themes before the cycle is repeated again, albeit still with modifications in the offerings.<\/p>\n<p>While Jose has plans to eventually open a restaurant \u201cso that we could share the food that we do with more people,\u201d he says, for now the focus is on delivering good &#8211; and healthy &#8211; food. \u201cI have always followed the principle that a cook is as only good as his\/her last meal.
